Mushroom Cauliflower Rice Bowl

Spinach is another one we don't think of that's rich in vitamin C. It's packed with numerous antioxidants and beta carotene, which may increase the infection-fighting ability of our immune systems. Similar to broccoli, spinach is healthiest when it’s cooked as little as possible so that it retains its nutrients. However, light cooking enhances its vitamin A and allows other nutrients to be released from oxalic acid.

 

Another fun fact is that for every cup of mushrooms, you get 3g of protein.  So, an entire carton (which ends up being like a cup when it's all cooked) of mushrooms is actually about 18g of protein! Cool right?
